Dad's Bran Muffins

1/3 cup applesauce

1/2 cup molasses

1 flax egg (1Tbsp flax seed meal and 3 Tbsp water- let sit for 5-15 minutes)

2/3 plant milk

1 cup whole wheat flour(I used whole Wheat Pastry Flour)

1 cup wheat bran

1 Tbsp baking powder

1 tsp. cinnamon

1/4 tsp iodized salt

1/3 cup shredded carrots

1/3 cup raisins

1/4 cup chopped walnuts

1 apple cored, peeled and shredded


My father-in-law used to make these muffins all the time and he lived until he was 95 so these are really good for you:). Preheat oven to 375. Make the flax egg in a small bowl and set aside. Add the applesauce, molasses flax egg and plant milk to a blender. Blend. In a big bowl add the flour, bran, baking powder and salt and whisk. Add the blended wet ingredients to the dry ingredients and combine well. Then add the carrots, the raisins, the walnuts and the apple and mix well. Spoon dollups into a muffin pan. It should make 12 muffins. Bake at 375 for 18-20 minutes. Mine were done at 18 minutes. Enjoy. These are great to take to work or school with you for a snack.
