2 cups soaked for 8-10 hours yellow split mung beans (or whole mung beans in bulk at Winco)

2 cups plant milk

8 Tbsp nutritional yeast

2 tsp tumeric

1 tsp black pepper

4 tsp baking powder

1 tsp onion powder

1 tsp garlic powder

4 tsp black salt (kala namak)


JUST egg is delicious but not only very expensive, but full of canola oil as well:( This recipe tastes just like just egg and cooks and smells so wonderfully. Combine all ingredients in a blender or food processor. I use a food processor but have to do it in two batches because its too much batter for my food processor. Blend until smooth. Get your non-stick pan hot, add the batter, roll it around to fill the bottom of the pan. Salt and pepper the batter the way you would JUST egg, then add Upton chorizo seitan and fresh spinach to the batter. Flip the batter over and cover the pan. Let cook for a couple minutes then flip again. Tastes so good and no oil!!!!
